Chicken Biryani!!!

CHICKEN BIRYANI!

I learnt to make this dish exclusively for my husband. It's his all time favorite. I use cooked rice for making this instead of making it the traditional style using 70 percent cooked rice and then slow cooking it with meat. It takes about 45 minutes to make this dish if using cooked rice otherwise another 20 minutes for cooking the rice.

You will need:
1 whole cut up chicken
3 cups rice

For marination:
2 cinnamon sticks
3 cloves
2 cardamom
1 tbsp coriander powder
1 tbsp cumin powder
1 bay leaf
2 tbsp ginger garlic paste
1 tsp red chilli powder
1 tsp turmeric powder
1/2 cup chopped mint leaves
1/2 cup chopped coriander leaves
1/2 cup plain yogurt
Salt to taste

Method:

First cook 3 cups of rice in a rice cooker. Once it is done, pour it onto a wide bottomed container and allow it to cool.( This is done to prevent the rice grains from sticking to each other)

Take the cut up chicken in a container and marinate it with cinnamon, cardamom, cloves, ginger garlic paste,red chiili powder , turmeric powder , chopped mint leaves, chopped coriander leaves, coriander powder, cumin powder , plain yogurt and salt to taste. Keep it aside for 10 minutes.

Take a pot and cook the marinated chicken in it on a medium flame. Add very little water if needed. Close the lid and cook for about 20 minutes ,stiring often enough to prevent it from getting burnt.Once the chicken is cooked add the cooked rice into this and mix well so that every rice grain gets coated well with the gravy .

The yummy chicken biryani is ready to be served!!!
