I was never into cooking till I got married and came to USA where you ought to cook your own to survive! :) But I am glad I developed this interest in trying out new dishes , thanks for all the cravings I had thinking about the delicious food that my aunty(mom's sister) cooked back home. Egg Plant fry!
This is the most delicious and simple egg plant recipe. It takes just minutes to prepare this. Egg plant fry has been my all time favorite since childhood.
You will need:
One large egg plant
1/2 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp tamarind paste
salt to taste
Samolina for coating
Method:
Make slices about 2 cm thickness from the egg plant .
In a bowl , mix chilli powder, turmeric powder, tamarind paste and salt together. Apply this mixture to the egg plant slices separately and keep it aside for 10 minutes.
Heat 1 tsp on oil in a pan. Coat each of the slices with samolina on both sides and shallow fry them in the pan. Add oil if required. Keep turning them for equal cooking on both sides of the slices. Cook for about 5 minutes.
The egg plant fry is ready to be relished!! It goes best with yogurt and rice. It also goes well as a side dish with dal rice!
