Spicy rice noodles!



This is a simple and easy dish to make. It is a very famous delicacy in my native Mangalore. It actually tastes really good when the rice noodles are made from scratch but it is very labourous process. I used the store bought rice noodles to make this dish.

You will need:

Rice noodles ( store bought, 1 packet)
1 cup grated coconut
1/4 tsp mustard seeds
1/4 tsp turmeric powder
2 to 3 dried red chillies
1/4 tsp cumin seeds (jeers)
1/2 cup peanuts
A few curry leaves
1/4 tsp chana dal
salt taste

Method:

Fisrt boil about 4 cups water in a pot and then cook the rice noodles in it for about 3 to 4 minutes and drain the water and keep it aside .

Grind the grated coconut, turmeric, red chillies, mustard seeds in a blender into a fine paste and keep it aside.

Take a pan, heat 1 tsp oil in it. To this add the cumin seeds,chana dal, peanuts and curry leaves and saute it till the peanuts get roasted. Then add the ground mixture and close the lid and cook it well till a nice aroma comes out of it. Add salt to taste. Then mix the cooked rice noodles into it till all the noodles get coated well.

Spicy rice noodles are ready to be served. It can be served for breakfast or as an evening snack.
